How about a one bowl meal that can literally be thrown together in minutes that’s filling, nutritious, and has healthy carbs, protein, fat, and vegetables? I’ve got a great one for you, and it’s super easy and delicious! It’s truly a macro complete meal, and it can be tweaked to use those leftovers you’ve got hanging around in your fridge or freezer.
Introducing…the Buffalo Chicken Quinoa Bowl!
Here’s the oh-so-easy recipe:
Buffalo Chicken Quinoa Bowl
Ingredients:
1/2 cup cooked quinoa
3 ounces cooked chicken breast, shredded
3/4 cup broccoli slaw, chopped
1 tablespoon feta cheese crumbles
1 tablespoon Buffalo Wing Sauce (I like Sweet Baby Ray’s)
Directions:
- Place chicken and quinoa in a microwave-safe bowl and heat in the microwave.
- Top with broccoli slaw, feta cheese, and buffalo wing sauce.
- Enjoy!
Nutrition information: 259 calories, 5g fat, 24g carbs, 27g protein
Of course, you can add more of these ingredients if you’d like, although I don’t recommend more than 1 tablespoon of buffalo wing sauce unless you like things super duper hot—like turn-your-face-red-and-make-you-sweat hot. We learned that one the hard way.
And you can get creative with these other options:
- Chopped carrots, cucumbers, celery, peppers, cauliflower, etc.
- Leftover cooked vegetables, chopped (broccoli, cauliflower, asparagus, green beans, etc.).
- Leftover meat, shredded or chopped
- Canned chicken
- Chopped avocado
- Scrambled eggs/egg whites
- Blue cheese crumbles
- Your favorite cheese shredded
- BBQ sauce
- Your favorite sauce or dressing
- And so many others…
To make things even easier, here are two meal prep tips that work perfectly with these bowls and more:
Quinoa: Cook some quinoa, then freeze it in 1/2 cup portions in these cute little containers. Thaw and use as needed!
Meat: We grill a lot of meat on Sunday—chicken breast, pork loin, and steak are our favorites, then we’ll eat it for lunches and/or dinners the following days. If any is left Wednesday night, we wrap individual pieces in plastic and foil and put them in the freezer. When we need a quick and easy meal, we take out what we need, defrost it in the fridge or microwave, and voila!
